It's not that
weird ... is it? That I wish to dedicate an entire post to the
whipping of egg whites?
Well I personally wanted to know how for a couple of reasons ( all of which are quite valid!)
1. My electric mixer is missing the whisk/beater attachments! ( I have
NO IDEA where they are!)
2. Old School whipping... thought it might be an interesting google search.
3. I want to bake
Hokkaido Chiffon Cupcakes which require egg whites and granulated sugar beaten ( with an electric mixer) until you get soft peaks. Anybody with good hokkaido recipes, kindly send the recipes to me at

Well an hour of googling and You Tube-ing later I discovered several videos and articles with loads of cool tips and techniques to achieve required firm soft peaks using elbow grease and a good balloon whisk.
Here are the tips I experimented with :
1. Use a
CLEAN copper or metal bowl.
2.
DO NOT use a
Plastic bowl ( plastic has chemicals in it which mimic fat or grease which is a BIG NO NO if you want your egg whites to stand up in peaks)
3. I didn't have any lemons handy so I used some bottled cooking LIME JUICE my mom had in the fridge. Soak a paper towel in the lime juice and wipe down the inside of the bowl and the metal whisk. ( If you don't have lime or lemon juice you can try a pinch of cream of tartar in the egg white. It has properties which help stabilize the egg without adding water to the mix)
Okay just
3 very simple rules above...
cool right?
One really great tip to remember though is that you basically need to
ADD AIR to your egg whites and make sure you have
NO grease in the mix or
egg yolk because that would
RUIN your mix and you might be whipping those egg whites for way longer than you planned!
Okay so start whipping the egg white and by
WHIPPING I do mean you need to
BEAT that egg white like you
MEAN to HURT it!
I am so not kidding here.
HURT IT!
Make sure your beating action is accomplished only with
repetitive and
FIRM flicks using only your
wrist and not your whole arm.
Don't whip it
so hard that you get egg all over yourself!
Just remember, you need to almost slice through the egg white with the metal balloon whisk
DOWNWARD and then follow through with an
UPWARD action. Imagine you are drawing some angry abstract art with a down and UP stroke ! or drying a face cloth by flicking it ... well yeah I hope you get the picture!
With this technique, I managed to turn the bowl upside down and not have anything fall out with just
under one minute of furious whipping!
Follow my tips and you should get the same result! If not write me and I might be able to help give you some pointers!
